Cork, located on the southern coast of Ireland, is home to the picturesque town of Skibbereen, which is crossed by the River Ilen. This region is known for its scenic beauty and cultural significance, particularly in the tradition of whiskey production. In 2007, three friends founded the West Cork Distillery in Skibbereen. This small, independent distillery is characterised by the production of high-quality whiskeys that are made with great care and craftsmanship.
From the very beginning, the founders focussed on quality and tradition, combined with an innovative approach. The West Cork Distillery uses crystal clear spring water and carefully selected grain. This commitment reflects the spirit of innovation and craftsmanship that characterises the Irish whiskey industry.
As with other West Cork bottlings, this whiskey is distilled three times. To ensure optimum interaction between the copper of the pot stills and the rising vapour, the stills at West Cork are only half-filled.
The West Cork Irish Whiskey CASK FINISH blended whiskey matures in first fill bourbon barrels and receives a special finish in IPA barrels. These beer barrels come from Black’s Brewery in Kinsale and give the whiskey an exceptional flavour and strong aromas.
