The Kilchoman SAUTERNES CASK MATURED Islay Single Malt Limited Edition 2024 is a rare and technically challenging special bottling from the independent farm distillery Kilchoman Distillery. For this edition, the whisky matured exclusively in former Sauternes wine casks for the entire maturation period, which is considered particularly challenging even within experimental cask maturations. Anthony Wills chose a targeted combination of fresh and refilled Sauternes casks from two distillation years, with the youngest cask being from 2018. The final vatting consists of 22% first-fill and 78% refill casks, which corresponds to a deliberate ratio of around 1:3.
This cask strategy builds on the distillery’s previous experience. The first Sauternes bottling from 2016 matured entirely in fresh casks, while the second edition in 2018 was only finished for a short time. For 2024, the decision was made in favour of full maturation in a balanced cask matrix, in which a large proportion of the refill casks had already been used for the 2018 finish. Bottled at 50% vol., non-chill-filtered and without colouring, this limited edition preserves structure, depth and cask character in its unadulterated form. The whisky is delivered in a high-quality gift box.
