This limited edition combines the pioneering spirit of the young distillery with traditional craftsmanship and innovative cask maturation. The single malt is matured in hand-selected oak sherry quarter casks, which allow a more intensive interaction between the whisky and the wood due to their smaller size. This results in particularly powerful, aromatic notes that make this whisky unmistakable.
At 52% vol., the Dùn Cana First Edition is bottled at natural strength, naturally not chill-filtered and without colouring to preserve its original depth of character. Tasting Note

Taste: Intense and full-bodied, characterised by dark fruits, sweet malt, sherry spice, caramel and subtle peat nuances.
Finish: Langs, powerful and complex, with lingering sherry notes, spicy oak and a fine smoky haze.
The Isle of Raasay Dùn Cana Sherry Quarter Cask is best enjoyed neat in a nosing glass or with a drop of water to open up the variety of flavours. It is an excellent accompaniment to hearty dishes such as grilled beef or lamb chops, as its sherry spice and subtle smoke emphasise the roasted flavours. It also harmonises well with strong cheeses such as Stilton or mature cheddar, as well as with dark chocolate or a juicy fruit tart.
