For this mezcal, 100% Espadín agaves are traditionally processed: The agave hearts (piñas) are roasted in earth pits over a wood fire, then ground, fermented and distilled twice. The mezcal is then matured for at least 13 months in new and used American oak barrels, giving it soft, perfectly balanced vanilla, caramel and smoky flavours.
