One representative is the Dewar’s 12 Year Old Blended Scotch Whisky, which is characterised by its double maturation process. In this process, carefully selected single malt and grain whiskies are first combined and stored in oak casks for initial maturation. After this first maturation phase, the whiskies are blended again and stored in casks for a second maturation. This second maturation allows the flavours to further develop and intensify, resulting in a smooth and mellow whisky.
This innovative maturation process, known as the ‘double ageing’ process, gives Dewar’s 12 Year Old a remarkable smoothness and balanced character. The technique not only improves the consistency and complexity of the whisky, but also emphasises the subtle, harmonious flavours that make Dewar’s whiskies so popular.
