Maturation
The maturation period of 18 years for Dalmore 18 Year Old is decisive for its elegant and deep profile. Initially, it spends its time in ex-bourbon casks made from American oak. After 14 years, it then goes into Matusalem sherry casks for a further three years. It remains in the sherry casks for its last year before bottling, but these are now stored upright – so that the whiskey comes into more intensive contact with the wood, which gives its character the necessary fine-tuning. It is then chill-filtered and given its characteristic hue with a little colorant.
Aroma and taste
Its powerful traits are already evident on the nose. Oak wood dominates at first and is then replaced by sweet vanilla and dark chocolate. There are also notes of orange and cinnamon. It is very intense and heavy on the palate. The dark chocolate remains and is complemented by coffee and spices such as cinnamon and nutmeg. There are also notes of sweet citrus fruits. In the long finish, the oak once again makes its way to the surface and allows the Dalmore 18 year old to finish as elegantly as it deserves.
