The fourth batch bottling from the Bimber Distillery once again impresses with carefully selected ex-bourbon oak casks.
Bourbon casks are made from Quercus Alba or white oak, also known as American oak. This type of wood complements the underlying character of the approachable, fruit-driven spirit, giving it sweet, rich vanilla and caramel flavours and a perfectly balanced spiciness.
Each cask is specially selected and married in handmade oak casks at Bimber Distillery before bottling.
This whisky has been distilled from barley from a single farm after it has been malted on a malting floor at Warminster Malting. The distillation takes place in custom-built stills from Bimber. The casks used for the single malt date back to 2017 and are one of the oldest first-fill ex-bourbon American oak casks at Bimber Distillery.
Tasting NoteColour: Golden yellow.
Nose: Tropical notes, roasted pineapple, mangoes, lemon peel, sweet malt bread and vanilla buttercream.
Flavour: Structured, lively, pineapple notes, ripe pears, toasted oak, vanilla pods and custard.
Finish: Langs, sweet and fruity, gentle cinnamon notes.
