Description
Hyde No.12 Single Pot Still Cask 1893 Irish Whiskey Commemorative Edition 46% Vol. 0.7 l – an exceptional Irish whiskey that heralds a new era for the brand as Hyde’s first single pot still whiskey. Hyde Irish Whiskey is known for its hand-picked bottlings, which are produced using traditional Irish distillation techniques. The Commemorative Edition commemorates the year 1893, when Douglas Hyde was sworn in as Ireland’s first President – a tribute to Ireland’s rich whiskey tradition.
This single pot still whiskey is made from a mash of malted barley, unmalted barley and Irish oats. The combination of these ingredients gives it a distinctive, creamy texture and a multi-layered flavour. Hyde No.12 is matured for at least 5 years in 200 litre ex-bourbon casks made from American white oak before being finished in Oloroso sherry casks. This double maturation allows the whiskey to develop a harmonious balance of fruity, sweet and spicy notes.
A high-quality and unique Irish whiskey that combines the characteristics of a genuine single pot still whiskey with modern ageing techniques – ideal for connoisseurs, collectors and lovers of the art of Irish distillation.
Tasting NoteColour: Rich gold with warm amber reflections.
Nose: Ripe fruit, sweet vanilla, caramel, spices and a hint of dark chocolate.
Flavour: Full-bodied, creamy, with intense notes of dried fruit, toffee, toasted oak, pepper and a subtle sherry sweetness.
Finish: Long-lasting, warm, with an elegant balance of wood, spices and sweet malt notes.
Hyde No.12 Single Pot Still is best enjoyed neat or with a few drops of water to emphasise the sherry and bourbon cask notes. It is also ideal for classic whiskey cocktails such as an Old Fashioned or a Whiskey Sour, which emphasise its spicy, fruity depth.
In culinary terms, it goes wonderfully with mature cheese, dark chocolate or roasted meat to emphasise its rich, malty and sweet notes.
