Cork, located on the southern coast of Ireland, is home to the picturesque town of Skibbereen, which is crossed by the River Ilen. This region is known for its scenic beauty and cultural significance, particularly in the tradition of whiskey production. In 2007, three friends founded the West Cork Distillery in Skibbereen. This small, independent distillery is characterised by the production of high-quality whiskeys that are made with great care and craftsmanship.
From the very beginning, the founders focussed on quality and tradition, combined with an innovative approach. The West Cork Distillery uses crystal clear spring water and carefully selected grain. This commitment reflects the spirit of innovation and craftsmanship that characterises the Irish whiskey industry.
This bottling contains 66% malted and 33% unmalted barley, giving it a high malt content. The whiskey is matured for five years in first fill bourbon casks, which give it particular depth and complexity. The whiskey is neither coloured nor chill-filtered, which preserves its natural colour and full depth of flavour.
