Junmai Daiginjo Genshu represents one of the purest forms of sake and is characterised by a multi-layered aroma profile. This sake offers scents of melon, peach, freshly cut grass and sage, while peach and tropical accents such as papaya, lemon and bitter orange stand out in the flavour. A subtle umami undertone adds depth.

Sake is divided into six categories based on the degree of polish of the rice grain. Junmai Daiginjo Genshu, made from high-quality Yamadanishiki rice from Hyogo, is polished to 38% of the kernel, which gives it complex flavours. Compared to wine, which often has 200 nuances of flavour, this sake can offer up to 400 nuances. With an alcohol content of 16% and a long, harmonious finish, this sake combines sweetness with sophistication.
