Kozaemon Junmai Ginjo Hiyaoroshi is a seasonally matured premium sake full of character from the Kozaemon brewery (Nakashima Shuzō) in Gifu, Japan. “Hiyaoroshi” refers to a traditional, single-pasteurised sake that is matured over the summer and is released in autumn at its ideal drinking maturity. This seasonal speciality is characterised by depth, balance and a round, harmonious structure – perfect as a transition between summer lightness and autumn fullness.
Made from high-quality rice and using the Junmai Ginjo brewing method, this sake has a clear style with elegant fruit and subtle complexity. Maturation gives it additional softness and depth of flavour. With an alcohol content of 15.5% vol., Kozaemon Hiyaoroshi combines fresh ginjo aromas with a silky texture and subtle umami component – a typical, multi-layered sake for early autumn.
Tasting NoteClear in the glass with a fine lustre. The nose reveals subtle fruit flavours of pear, yellow apple, melon and a hint of marzipan. Soft, round and balanced on the palate, with a delicate sweetness, elegant acidity and a finely structured body. The autumnal ripeness is reflected in a calm, deep finish with a harmonious umami base and floral undertones – a sake with character and delicacy.
Kozaemon Hiyaoroshi harmonises perfectly with autumnal dishes such as mushroom dishes, roasted chicken, tempura with root vegetables or miso-glazed salmon. It also unfolds its potential with stronger vegetarian dishes, tofu with soya sauce or light meat dishes with Asian flavours. Ideal at a drinking temperature of 10-15 °C, can also be enjoyed slightly warmed at 35-40 °C.
