After the harvest, the grapes are destemmed and fermented in cement or stainless steel tanks. A maceration period of two to three weeks ensures the targeted extraction of structure and tannins. The subsequent maturation in neutral tanks preserves the varietal character of the Shiraz, without the influence of wood, and emphasises the pure fruit, the spice and the origin of this Shiraz.
