The grapes are harvested exclusively by hand in the morning to preserve maximum freshness. After careful selection on the sorting table, they are completely destemmed and macerated for four hours before the must is clarified by cold decanting for 48 hours. Fermentation with indigenous yeasts takes place at a controlled temperature of 16-17 °C in cement tanks, where the wine then matures for three months under fine lees. This precise vinification creates a wine of great personality that combines the mineral tension of the Atlantic climate with a silky texture and elegant depth – a prime example of Portuguese craftsmanship and loyalty to the terroir.
